Get Crazy with the Bison!

Try this recipe for spicy ground bison with green beans and tofu from foodandwine.com.  Its crazy delicious and easy to make. 

I started off with the bison and tofu together to save some time, the family was gnawing on my legs so I had to hurry!  I added ginger and lime juice to give it that Capt X flava.


Cooking tip:  Quit stirring!  Put the meat, spices, veggies, ect in the pan, give it one big stir and let it cook.  This gives the bison and tofu a change to soak in the spices. 
I finished the dish off with some squash, basmati rice and lemon slices.

Total cook time: 30 Mins


Makes 4 Servings. Per serving you get (without rice): 254 cal, 13 gm fat, 2.5 gm sat fat, 15 gm carb, 5 gm fiber, 20 gm protein.
